TORTILLA LASAGNE |

Maize flour tortillas, interlaced
with refried beans and lightly sauteed vegetables and topped
with a capsicum sauce.
Cooking Time : 1 hour.
Preparation Time : 30 minutes.
Serves 4. |

For the tortillas |
3/4 cup maize flour (makai ka atta)
3/4 cup plain flour (maida)
4 teaspoons oil
3/4 teaspoon salt |
|
For the refried beans |
|
1 cup red kidney beans (rajma)
1 onion, sliced
2 tomatoes, chopped
1 clove garlic
3 green chillies
2 teaspoons sugar
1 teaspoon roasted cumin seed (jeera) powder
2 tablespoons butter
2 tablespoons oil
salt to taste |

For the vegetable layer |
|
1 onion, sliced
1 capsicum, chopped
1/2 cup corn kernels
1 cup mushrooms, sliced
1 teaspoon Tabasco sauce
1 tablespoon oil
salt and pepper to taste |

For the capsicum sauce |
|
1 capsicum (red or green), diced
1 tablespoon plain flour (maida)
1 cup milk
2 tablespoons butter
salt and pepper to taste |
