Mexican Omelette Roll2018-04-23
- 1 roti
- 3 tbsp sweet and spicy ketchup
- 1 egg
- 3 tbsp milk
- 2 tbsp cheese
- 1 tsp butter
- 3 tbsp diced bell peppers ( red, yellow, green)
- 2 tbsp diced boiled potato
- 1 tbsp chopped coriander
- Black Pepper powder
- Salt to taste
In a bowl whisk egg with milk, cheese, pepper powder and salt.
Heat butter in a pan, add bell peppers, potato and sauté for a minute, add the coriander, pepper and salt.
Now add the egg mixture,mix everything and allow the omelette to cook on one side, then flip and cook on the other side.
Spread ketchup on the roti, place the omelette, roll tightly and serve.
