Mexican Omelette Roll

    Ingredients

    • 1 roti
    • 3 tbsp sweet and spicy ketchup
    • 1 egg
    • 3 tbsp milk
    • 2 tbsp cheese
    • 1 tsp butter
    • 3 tbsp diced bell peppers ( red, yellow, green)
    • 2 tbsp diced boiled potato
    • 1 tbsp chopped coriander
    • Black Pepper powder
    • Salt to taste

    Method

    Step 1

    In a bowl whisk egg with milk, cheese, pepper powder and salt.

    Step 2

    Heat butter in a pan, add bell peppers, potato and sauté for a minute, add the coriander, pepper and salt.

    Step 3

    Now add the egg mixture,mix everything and allow the omelette to cook on one side, then flip and cook on the other side.

    Step 4

    Spread ketchup on the roti, place the omelette, roll tightly and serve.
