Spicy Thai Prawn Noodles2018-04-11
- Sesame oil:- 1 tbsp.
- Eggs (beaten):- 2
- Red chili (chopped):- 1
- Ginger (grated):- 1 thumb-size piece
- Raw king prawns:- 450g
- Soya sauce:- 1 tbsp
- Coriander (chopped):- small bunch
- Mint (chopped):- ½ small bunch
- Zest and juice lime:- 1
- Roasted peanuts (chopped):- small handful
In a frying pan, heat oil and pour beaten egg. Swirl around the pan to prepare an omelet and let it cook for two minutes.
Then flip it and cook the remaining side for a few minutes.
Take out in a dish and cut into thin strips.
Now, add the ginger and chili to the deep bottomed pan. Fry for a few minutes and then tip in the prawns, egg and noodles.
Splash well in the soya sauce and fry for another few minutes.
Mix the chopped veggies and pour the lemon squeeze and zest over it.
Sprinkle chopped peanuts and serve hot.
