Thai Green Chicken Curry

    Ingredients

    • Oil :- 2 tbsp
    • Boneless Chicken :- 1 kg
    • Soya Sauce (Dark Soy) :- 1-2 tbsp
    • Flour :- 1 tbsp
    • Green Onions :- 2-3 (chopped)
    • Garlic Cloves :- 3-4
    • Ginger :- 1 tsp (chopped)
    • Coconut Milk :- 2 Cups
    • Fish Sauce :- 2 tbsp
    • Green Curry Paste :- 3-4 tbsp
    • Sugar (white) :- 2 tbsp

    Method

    Step 1

    Wash the chicken, cut it into pieces as required and place in a bowl.

    Step 2

    Fling or toss the chicken in 1-2 tbsp. dark soya sauce followed by flour. Make sure the pieces are coated uniformly.

    Step 3

    Heat the oil in a large container/heating pan.

    Step 4

    Add chicken to the pan and sauté it for a few minutes till it turns a bit brown. After it turns brownish you can remove it from flame & keep it aside.

    Step 5

    Now add the green curry paste to the pan and cook it for some time till it exudes a fragrance.

    Step 6

    Add green onions, ginger, garlic, a little salt and cook for another few minutes.

    Step 7

    Once it releases a fragrance, add the chicken back to the pan. Stirring is advised in a way that it gets coated with the curry prepared.

    Step 8

    Mix the fish sauce, a tablespoon of soya sauce and coconut milk with the curry. Also add little sugar to it.

    Step 9

    Let this mixture boil for about 15-20 minutes making the chicken turn softer. Once cooked, remove from flame and serve.
